4 Delicious Toppings for Breads and Muffins

If you've read my blog for even occasionally, you know how much I love making quick breads and muffins full of fruits or vegetables for my family.  

Today, I'm going to share with you a few of my favorite ways to put a little extra love into your baked goodies -  From glazes to toppings, I think you'll find your family will love these just a much as mine!



Sweet Oat and Nut Topping

Ingredients:
1/3 cup rolled oats
1/3 cup chopped walnuts
1/3 cup brown sugar

Directions:
Combine oats, walnuts and brown sugar with the back of a fork (do not add butter). Sprinkle to the  mixture on the top of the batter and gently press down with the back of a spoon so you won't loose any of the yumminess once the breads/muffins are baked.

Lemon Glaze
 
Ingredients:
1 cup of powdered sugar
2-3 tablespoons of lemon juice
1 teaspoon of lemon zest 

Directions:
To make the glaze, combine the  powdered sugar, lemon juice and zest.  You may want to add a bit more powdered sugar or a dash of milk until you have the desired consistency. Allow your bread or muffins to completely cool before drizzling the glaze over the top.


Streusel Topping


Ingredients:
Scant 1/2 cup flour
1/4 cup brown sugar, packed
1/2 stick unsalted butter, softened
1/2 teaspoon cinnamon

Directions:
Pulse the softened butter with the flour, brown sugar and cinnamon until it is a bit crumbly (or you can use a pastry cutter). Gentle push the struesel topping into the batter before baking.

Orange Glaze

Ingredients:
1/3 cup sugar
1/2 cup freshly squeezed orange juice

Directions:
Combine the sugar and juice in a saucepan and bring to a boil to dissolve the sugar.  Reduce the glaze by half.  Gently poke holes over the top of your bread (in this case I used it on pound cake) with a toothpick, then brush or drizzle the warm glaze all while it is still warm until the bread is saturated.  You'll do this several times until all the syrup is used up.
